Miraval’s Multigrain Nutrition Bars Recipe
½ Cup 7-Grain Cereal
2 Cups Rolled Oats
¾ Cup Peanut Butter
½ Cup Honey
Pinch of Salt
1 Cup Mixed Dried Fruit (apricots, cherries, cranberries, etc)
2 Tbl Almonds, Chopped
1 Tbl Cashews, Chopped
¼ Cup Sesame Seeds
1Tbl Ground Flax Seed Meal
DIRECTIONS: Spread the nuts, rolled oats and sesame seeds onto a sheet pan and toast in the oven at 350 for 8-10 minutes or until lightly golden brown. Remove from oven and let cool, then transfer toasted ingredients into a medium size bowl with the dried fruit and flax seed, set aside. In a saucepot, bring ½ cup of water to a boil, add 7 grain and remove from heat. Add peanut butter, honey, salt and vanilla to the saucepot and return to low heat. Cook until mixture looks silky and shiny (about 4 minutes). Carefully mix the hot mixture into the dry ingredients, making sure that all the peanut butter mixture is evenly distributed. Press mixture into a greased 8x8 baking dish. Refrigerate bars for 2 hours before cutting.
